Legs of bricks

I officially can't walk. Not because of my lower back, but because every step makes my hamstrings feel like they're going to snap!

Dinner: Awesome spelt mixed bean burgers!!!!
Here I am mixing it all up!
The finished product: on Cobs buns, so yummy.
Recipe:
  • 1 + 1/2 cup cooked beans ( any type, make sure they're drained and rinsed)
  • 2 small carrots, washed and chopped into pieces (everythying will be pureed so it doesn't matter about the cuts)
  • 1 vidalia onion, chopped into pieces
  • 1 red pepper, chopped
  • 1/2 cup spinach
  • 1 teaspoon dill
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayene
  • 2 garlic cloves, minced
  • 1/4 cup sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1 cup spelt flour or any other flour
Preheat oven to 400 and oil your baking sheet (or you can use parchment paper). Place everything but  the sunflower, pumkin, chia and flax seeds and the flour in a food processor. Puree until it is smooth. Put this mixture into a bowl with the seeds. Add the flour slowly until you reach the desired consistency. You want to make sure that they will stay together. Shape them into the desired shape on your baking sheet and MAKE SURE TO FLATTEN (or else they'll be fat and wont cook in the middle :) ), then bake on each side for 10-15 minutes, or until golden brown.
