Easy cumin red lentil dish!

Just made the most delicious red lentil bowl. Served it with papadum and long grain organic brown rice.
This was really easy to make; the only recommendation I have on the following ingredients is to wash the lentils before hand.
Also: start cooking rice before you cook this :)
  • 2 cups of red lentils (washed :) )
  • 2 tablespoons oil or vegan butter (I used olive oil)
  • 4 minced garlic cloves (I would have added more)
  • 2 medium sized yellow onions (chopped finely)
  • 1 teaspoon cumin seeds
  • 6 cups of water
  • 1 tablespoon ground coriander
  • 1 teaspoon cayenne (add more or less depending on spice preference, this measurement made it hot but manageable)
  • 2 teaspoons salt
Saute the garlic, onions and cumin seeds in the oil/butter. Wait until onions are translucent and then add the water, lentils, coriander, cayenne and salt. Then reduce heat to less than medium and cook for about 25 minutes, or until desired consistency is reached.  Serve over brown rice that you started cooking before you started cooking the lentils and enjoy!  :)
